Italian Tomato Soup

Recipe will feed 4 to 6

3 tbls olive oil
2 carrots, peeled & chopped
1 small onion, chopped
1 clove garlic, minced
1 (28-ounce) can tomato sauce
1 (16-ounce) container chicken broth
1 (15-ounce) can cannellini beans, drained & rinsed
1/2 cup shredded fresh basil leaves
1/2 cup pastina or ditalini pasta (any short pasta will also work)
1/2 tsp red pepper
1/2 tsp salt
1/2 tsp black pepper
Freshly chopped parsley, optional
Fresh grated parmesan cheese, optional

Directions:
Heat the olive oil in a large soup pot over medium-high heat. Add the carrots, onion, and garlic and saute until soft, about 2 minutes. Add the can of tomato sauce, chicken broth, cannellini beans, fresh basil, red pepper, pasta, salt and pepper. Lower heat and simmer for 10 minutes. Top with grated parmesan cheese, fresh chopped parsley and serve.
